Quick and Easy Breakfast Recipes

We know that mornings can be a hectic part of your day, and many people report not eating breakfast due to a lack of time. That’s why we compiled these 4 quick and easy breakfast recipes to keep you on track and get your day started the right way! These recipes all combine healthy sources of carbohydrates, protein, and fats to keep your energy up until your next meal!

Chia Seed Pudding

Ingredients

  • 3 Tbsp. Chia Seeds
  • ½ cup non-dairy milk
  • Cinnamon (as much as desired)
  • Berries

Method

  • Put chia seeds, non-dairy milk, and cinnamon in a bowl and stir until combined
  • Cover and place in the fridge overnight
  • In the morning, top with berries
  • Enjoy!

Overnight Oatmeal

Ingredients

  • ½ cup old-fashioned rolled oats
  • 1 Tbsp. chia seeds
  • ¾ cup non-dairy milk
  • Cinnamon (as much as desired) or 1 Tbsp. cacao powder
  • 1 Tbsp. almond butter
  • Berries

Method

  • Place oats, chia seeds, non-dairy milk, and spice of choice (cinnamon or cacao powder) into a bowl and stir until combined
  • Cover and place in the fridge overnight
  • In the morning, top with almond butter and berries
  • Enjoy!

Chocolate Avocado Mousse

Ingredients

  • ½ a large avocado
  • 2 Tbsp. cacao powder
  • 1 Tbsp. raw honey or pure maple syrup
  • Berries

Method

  • In a food processor, blend together the avocado, cacao powder, and sweetener (honey or maple syrup)
  • Once smooth, place the mixture into a bowl and top with berries of choice
  • Enjoy!

Smoothie Bowl

Ingredients

  • ½ a banana, frozen
  • 1 cup berries of choice
  • ½ cup non-dairy milk
  • Spinach (optional, but recommended)
  • Any combination of the following toppings: hemp seeds, chia seeds, more berries, almond butter, coconut flakes, coconut oil (creates a hard coconutty shell when it touches the cold smoothie!), gogi berries, a couple of banana slices, walnuts, whole or sliced almonds, cacao nibs

Method

  • Place banana, berries, non-dairy milk, and (optional) spinach in a blender and blend until smooth
  • Pour smoothie into a bowl and top with any combination of the listed toppings
  • Eat with a spoon and enjoy!
